This easy butterscotch spice cookie recipe is made using a cake mix making it an easy Christmas cookie to whip up even for a last minute Christmas party.
Christmas cookies are a key part of so many holiday celebrations. You likely already have several favorite Christmas cookie recipes but there is also room for one more if it’s delicious.
One kind of cookie I love to make around the holidays is cake mix cookies. They are my go-to when I need a quick cookie. The recipe comes from my great aunt and I believe she usually used a yellow cake mix with chocolate chips and that’s the first way I ever had them.
Fun fact, they were also the first cookies I baked for my husband before we even started dating. Did they help start our relationship? Who knows but I know it didn’t hurt! They are still a favorite of his.
Since then I have loved experimenting with different flavor combinations and I’ve shared a couple here on the site. Double chocolate peppermint cookies and Christmas funfetti cookies are the two I’ve shared so far and both are family favorites.
This year I decided I wanted to make some with a gingerbread feel so I reached for a spice cake mix and some butterscotch chips and a new favorite has been born. They are so delicious even my husband that isn’t a huge fan of non-chocolate cookies said these were quite good.
The best part is they use few ingredients and are easy to mix by hand. They are also a great cookie to teach kids to make on their own because there are very few steps.
