Looking for a simple Christmas breakfast recipe? These hot chocolate muffins are easy to make and delicious. They can even be frozen.
I love making muffins, they are simple, not overly sweet, and you can make all kinds of delicious flavors. The possibles are endless with muffins.
My new favorite muffins are the perfect Christmas breakfast treat, hot chocolate muffins. They are made using hot chocolate mix and topped with marshmallows, what could be better?
I like to use either my homemade hot chocolate mix or Cadbury drinking chocolate. Both are delicious and I always have several kinds of hot chocolate around.
I haven’t tried this recipe using the type of hot chocolate that contains flakes of chocolate, like the ones from William Sonoma. I’m not sure if they would work well or not since it would be hard to mix them in unmelted. If you do try it let me know!
Another great thing about these is that you can make them ahead of time, you can even freeze them. It’s a great treat to make while things aren’t too busy and pull them out for those busy mornings. They thaw quickly but you can also pull them out the night before to be sure they are ready when you need them.
I also love to make a cup of hot tea and have one of these for an afternoon snack. It really helps that afternoon sweet tooth and is the perfect little treat.
You could also add chocolate chips to the batter. I want to try adding some white chocolate chips sometimes for something a bit different.
This is a recipe that will be going in my Christmas planner so I remember to make them every year. I may have to start doubling my hot chocolate mix recipe so I can have plenty for these as well.
Hot Chocolate Muffins
These delicious muffins are a wonderful Christmas morning treat with all the rich flavor of hot chocolate.
Ingredients
- 2 cups homemade baking mix
- 1/3 cup sugar
- 3/4 cup hot chocolate mix
- 2/3 cup milk
- 1 egg
- 2 tablespoons coconut oil (melted)
- 1 teaspoon vanilla extract
- 1/2 cup mini marshmallows
Instructions
- Preheat oven to 400 degrees
- Mix sugar, hot chocolate milk, and baking mix.
- Add wet ingredients, don't over mix.
- Scoop into greased muffin tins.
- Bake for 15-17 minutes, remove from oven, top with marshmallows and return to oven for 1-2 minutes or until done.
