Christmas Funfetti Cake Mix Cookies are a fun, delicious and easy Christmas cookie to bake with your family this holiday season.

Baking for me is something that makes me think of family and special memories. My family has passed down many great recipes and food has always been a big part of our holidays together.

I have so many memories tied to baking, especially cookies. My grandma and I baked cookies all of the time when my mom was in nursing school and I stayed with her. I remember baking Halloween sugar cookies with my great aunt when my mom and I stayed with her in California for a few weeks.

And I remember taking cookies to a local college ministry during finals week. It may have just been an excuse to see a guy I was interested in, I ended up marrying him so they must have been amazing cookies. Or maybe there was more to it but he does like my baking.

Those cookies I baked for my now husband were cake mix cookies. It’s a recipe passed down from my great aunt, it’s one I never met but I’ve heard so many stories about what a great hostess she was and what great hostess living in the south doesn’t serve their guests a nice sweet treat?

I learned to make these cake mix cookies when I was very young. I have loved mixing up different cake mixes and mix-ins. I believe the ones I made for finals week were a yellow cake mix with chocolate chips. A simple but delicious take on the classic chocolate chip cookie. They are also great with M&Ms!

I hadn’t made cake mix cookies in years but something made me think about them and I had to make some. I decided to try a combo I hadn’t tried before and made them festive for the holidays.

These cake mix cookies still use the classic yellow cake mix but have Christmas sprinkles mixed in! It leaves you with fun and delicious Christmas funfetti cookies.

They are soft and chewy and like a flavorful sugar cookie. The Christmas sprinkles make them so much fun and because they use a cake mix they are easy to make.

This is a good cookie to keep all of the ingredients on hand so if you have any last-minute guests you can whip up some great cookies to serve.

Yield: 24 cookies

Christmas Funfetti Cake Mix Cookies

Simple and delicious Christmas cookies that will bring a bit of fun to your holiday party.

Prep Time 10 minutes
Cook Time 7 minutes
Total Time 17 minutes

Ingredients

  • 1 cake mix
  • 2 eggs
  • 1/2 cup oil
  • 1/4 cup red and green sprinkles, extra for topping

Instructions

  1. Pre-Heat oven to 350 degrees.
  2. Mix the cake mix, eggs, and oil well. Fold in the sprinkles.
  3. Roll dough into balls and roll in the extra sprinkles. Place on cookie sheet and bake for 7-9 minutes.

Note: Usually I stay away from artificial dyes but for these cookies, it’s best to use artificially dyed sprinkles. Naturally dyed sprinkles are great for putting on cookies after they bake but they don’t maintain their color when they are baked.
