Double chocolate peppermint cookies are rich and delicious. They are made using a chocolate cake mix and are extremely easy to make and perfect for the holidays.
My favorite holiday flavor is peppermint. I love peppermint everything! Some people can’t wait until pumpkin spice season but I’m all about peppermint season.
My husband’s favorite Christmas cookies are peppermint chocolate chip cookies. However, these are one of my favorites! They are chocolatey, soft, and full of peppermint flavor.
These are also great because you need very few ingredients as it uses a cake mix for the base. I love cake mix cookies because they are easy to make but also they are nice and soft. Plus with so many types of cake mixes out there you can get really creative.
I used a devils food cake mix for this recipe but you can use any chocolate cake mix you want. I haven’t tried it with a gluten-free mix so I’m not sure how that would work. I will be sure to update this post if I’m able to test that out.
You could also add crushed peppermint candies to the cookies if you’d like. They have a great peppermint flavor with just the extract but it could be a nice addition.
If you don’t like white chocolate you could subsitute semi-sweet chocolate chips as well. I prefer the balance of the white chocolate but they are very flexiable cookies.
The last time I made these I shared some with my in-laws and now they want a whole batch, they are that good! We ate ours quickly as well and I plan to make them at least one more time this holiday season.

Lisa Sharp says
You can refrigerate the dough for a couple of days. You can also make dough balls and flash freeze them and keep them in the freezer for around 3 months. They will just take a bit longer to bake.

I’m sorry I don’t understand. You are asking how long to thaw baked cookies? I’ve not frozen these as cookies but cookies generally take less than an hour to thaw.
